Smoked Salmon Bruschetta


1 small baguette thickly sliced on an angle
2 tbs extra virgin olive oil
2 tbs Basil pesto (optional)
125g fresh bocconcini or goat’s cheese
1 small Lebanese cucumber, sliced lengthwise into thin ribbons
50g Ocean Blue Smoked Salmon (or Ocean Blue Smoked Trout)
Watercress or chives, chopped for garnish
Black Pepper


Brush both sides of sliced bread with olive oil and grill each side until toasted and golden. Spread each slice with a little basil pesto. Add a slice of bocconcini or goat’s cheese, arrange a ribbon of cucumber and top with a piece of smoked salmon. Garnish with watercress or finely chopped chives. Season with a little black pepper.
